forms only part of the Dallot family business. The main enterprise is the
raising of Charolais beef cattle, selling their meat on local markets.
They operate out of the hamlet of La Bidore, just to the south Châteaumeillant
itself, and their ramshackle buildings are just opposite those of Fabien
They produce two different cuvées,
the ‘Tradition’ comes from three hectares of vines and is seasoned
with 10% Pinot Noir, whilst their ‘Gourmandise’ is 100% Gamay. They
are also have a little Pinot Gris, which although permitted, is falling
out of favour.
